For peeps who don't like mushrooms, eggplant is a terrific substitute in most recipes.


You might also be able to substitute zucchini instead of eggplant (or mushrooms), but it depends. Zucchini is more watery than eggplant so it can become too soft for some dishes. It also doesn't have the same "meaty" bite as mushrooms and eggplant.


Now a Confession: Eggplant was literally one of the very last vegetables I incorporated into my plant-based diet. Prior to being vegan, my only experience with eggplant was eggplant parmesan LOL.


A few years back, noticing how affordable eggplants were, I started buying them up and forcing myself to find ways to use them. Hence where all the new eggplant recipes come from! Enjoy! 🍆

11 Creative Vegan Sloppy Joe Recipes

Sloppy Joes are THE sandwich of summer (if you want my opinion).


It's extremely hot where I live these days (100s) which means a piping hot meal or soup is out of the question. While I don't mind eating salads and "bowls" (e.g. burrito bowls) my family definitely gets tired of them. I also find I can't serve the typical sandwich (e.g. PB&J, "Eggless" Egg Salad, Mock Tuna) since they're eating those for lunch.


Which leads me back to the sloppy joe. It feels more like a meal (especially when served "open face") and over the years I've created 9 interesting variations to keep it exciting and fresh.

For this Free Recipe Friday, I'm sharing my "OG" recipe -- the classic sloppy joe


BUT before we get to the recipe... how about some fun facts?


Sloppy Joe's are called a Taven in Iowa, and a Slushburger in the Upper Midwest and North Dakota. Other names include barbecues, Manwich, spoonburgers, steamers, yum yums, and wimpies. If you watched the show Rosanne in the 90's, she was always serving up "loose meat" sandwiches, which same-same.


LENTIL SLOPPY JOES
1 small onion, dice
2 garlic cloves, mince
1 green bell pepper, seed, dice
1/2 cup tomato sauce
2 tbsp ketchup
1 tbsp yellow mustard
1 tbsp Dijon
1 tbsp vegan Worcestershire sauce (optional)
1 can (15-oz) lentils, drain and rinse (or 2 1/4 cups cooked)
1/4 tsp ground cumin
1-2 tbsp brown sugar (optional)
cayenne or hot sauce (optional)
smoked paprika
vegetable broth


Saute onion and garlic in 1/4-cup broth until translucent. Add peppers and continue to cook to desired tenderness (I like them pretty soft). Stir in remaining ingredients. Cover and simmer on very low for 5-30 minutes if you can. These Joes become even more flavorful after "marinating" in the fridge for a few days. Serve on your favorite hamburger bun or sliced bread.
